I love cooking and I love hosting dinner parties for my friends.
What have you have cooked\baked lately? Maybe we can share some pics and recipes? :)

I can't cook, I can burn toast and freeze Ice cubes though!
My friend makes these amazing pixel cookies where he makes all coloured cookie dough and cuts the dough in a square shaped playdough cutter then he lines all the cubed shape strips into a picture of whatever video game character and bakes. They are so amazing! I'll have to find a picture.

i was *going* to make cupcakes today, ran out of time. i'm really not a cook/baker. i did make dinner for the fam the other night- which for me is a biggish thing. tuna bake, garlic potato mash garlic bread. that's probably the extent of my culinary skills.

I can't really cook. My favourite dish is meatloaf cause I like making little mince snowmen and then playing Stuart Diver with them in an avalanche of breadcrumbs/egg/spices.

love every aspect of cooking: thinking about what to prepare, the shopping, the quietly preparing everything for a big dinner, watching ppl enjoy my food, the social aspect, the feeding aspect...love it!
i mostly cook belgian cuisine and i love the vast array of high quality ingredients we have here.

A friend from London is in Sydney at the moment and she has requested spaghetti bolognese, which I find a little boring. But I cooked it last night (everyone know spaghetti bolognese is better the next day) with 50/50 beef and pork and some good quality smokey bacon. I'm making italian mushroom ragout and home made mini garlic breads to put in the middle of the table and the guests can serve themselves. For dessert I have made lemon coconut truffles! Main course is going to be quite heavy so I wanted something light/small to finish it off. :)

Oh that risotto sounds devine!! I do buy food mags sometimes. Donna Hay is my favourite!! I have a few of her cookbooks also. The main food website that I use is lifestylefoods.com.au it's great for searching for recipes too. You can search by ingredients which I love.

I also make great massaman curry from scratch, corn fritters, takoyaki, okonomiyaki, sushi, pad thai, rice risottos, pizzas, whatever! I just love food. As soon as I have a house (decent kitchen is a must), I will be having some of you girls around for a big gay dinner party.

I do love Japanese themed nights, mmmm sushi, tempura, okonomiyaki, takoyaki, miso soup, seaweed salad! And Asian food is so much cheaper here than in NZ, I'm up for it.

It just occurred to me that I should make rainbow coming out cakes. Just like last weekend's one but with "I'm gay" iced on top. If it goes badly then you still have cake. Perhaps I'll give one to my family one day.

I find cooking quite therapeutic (I get this way whenever Masterchef is on :P) but I'm only just learning the basics of chopping and stuff.
But been a hardcore eater of pretty much everything you got up until recently. When i got food poisoning from sushi.

mmmmmm...sounds lovely!!!!!! thank god i live so far away coz i would've invited myself!!!!
spag bol, the real spag bol, is a bit of a boring dish but in all honesty, when made the proper italian way, it takes forever!
my colleague's mum (they're from sicily) makes her own tomato base by putting meat with freshly peeled tomatoes and herbs of course for hours and hours on the stove....takes forever but the taste reflects that of course.
those lemon coconut truffles sound delish!!!
doesn't matter if the main course is a bit heavy...give your guests a nice digestive drink and they'll be chuffed like pigs in shit... :D
well we're on a diet...summer's coming so a change of culinary habits is in order....long over due to be honest! but anyway, every excess kilo comes with a lovely story so.... :)
am making white asparagus, don't know if you can get them but they are divine. the non-diet way of preparing them very nicely is to boil them a bit, finish them off in cleared butter, boil eggs, mash 'm with some of the melted butter and some finely shredded parsley, serve all of this with some little boiled potatoes and bob's your uncle. so the diet version of this is without the butter and no tatties.
ok, i got a feeling this thread is gonna become a foodie blog!

they'll come naturally...one ingredient in someone else's post will make me think of other recipes....
so your recipe of today is to make my dish the way i described it in my previous post but use green asparagus if you can't get the white ones. yummie for the tummie!! :)
i'll introduce you girls to my national cuisine...prolly one of the best in the world....and no, us belgians do not have a patriotic bone in our body so it must be true :D

cooking doesn't require exact weights and measurements, baking does though.
keep tasting your food whilst cooking it and whatever tastes nice, is perfect.
really cilipadi, try it, it's - like someone already said on here - very therapeutic to cook.
always work with good quality ingredients and follow your taste buds: you can't go wrong.

What sort of cake? My dad has a slow-cooker and cooks really yummy chocolate puddings in that. I wonder if I could substitute a rice-cooker?

put that demon to rest together with your inner lawyer... ;)
there really isn't anything impressive about cooking from the heart. i find ppl who can bake nice things impressive, that's much more of an art form.
when cooking, use your eyes, nose and taste buds. feel the food. textures. it's that simple. then think about scents and tastes and try to figure out what would work together.
and if not, use a cook book and start from there. you'll see, after a while you'll be able to cook from scratch with no book in sight!
the "mise en place" is very therapeutic...chopping away, having a little glass of wine (one shouldn't but it makes the cooking experience so much more sexy :D ), dreaming about whatever, all those scents like you said...see cilipadi, you got it in you!
no wasabi, i'm not a pro but i did go to nightschool coz a few years ago, i was so fed up with the corporate world that i wanted to get out of it and i thought there was a way out through food. was fed up with the politics in big businesses and felt like doing something where you would either get instant gratification or instant disappointment. no need for strategies. if you know what i mean....
but my wife and i changed our future plans drastically so i'm sticking to the job, hopefully only for a little while more.
i'm a very decent cook but the learning process is never finished and that's what makes it so much fun.

being a chef must be a very tough job, working whilst everybody else is having fun, truckloads of pressure every day but when you have the passion, you'll more than likely love it.
and feeling passion in your work, being able to create...it must be so nice!

Thanks, I know its hard work but I believe its worth it, the Bavarois was nice but it took ages to get them out of the mould

always easier to put a bit of confectionary sugar in the wet(ish) mould or glad wrap works fine as well.

I had the best Banofie Pie on monday at a cafe i never tryed it but im in love!!!
I like simple tastes not too much ingredients or added cream..
Cinnamon toast, french toast,
stirfrys, one pot dishes,
I love experimenting with herbs and i used my blender alot last summer to make frozen berry and yoghurt smoothies!
at the moment im into slow cooking meat in the oven..
i made a lamb curry and put it all in a oven dish and cooked it on low for 5 hrs the meat was so tender!!
u can do that Cilipadi!!
and apple pie is easy too!!

hi ladies
My cake turned out so much better than I expected it would. The cardoard sauna that I made for the elephant cake to walk into is hilarious. And there is a licorice road with a channel 7 van driving down it trying to catch Mr Shuffles as he goes into the sauna. Will post some pics after tomorrows competition and auction.
Meanwhile who is in love with their slow cooker? OMG best appliance I have ever bought.

I am a great cook, and funnily had never decorated a cake before due to the fact that I dont eat icing or sugar.
But it turned out ok as I did heaps of preparation work before hand by watching every single you tube video about icing a cake.
I learnt it is important to crumb coat a cake with exposed edges before icing, to get the best result.

I've never tried to make chocolate eclairs, and why should I bother when there is a little bakery in town that does white and brown chocolate ones, 12 mini one's for $4.60... you can get loads of them and make a big eclair cake! Delish!

it just gives me loads of pleasure to prepare something from scratch, something you most of the time have no idea what they put into it when you buy it in the store.
it's more than likely some primitive feeling i get when feeding my wife/family/friends, it gives me a buzz.

you don't eat sugar coz you don't like it or can't eat it? coz if it's the latter of the two, have you checked out tagatose? there's no nasty stuff in there like aspartame and you can use it for baking as well.

I know Happy and the website I added has heaps of recipes too. I was looking for all time favourite recipes and I'm trying to get people to share. :)
Below is one of mine. I have been making it for years. It's a super simple lentil soup but it's cheap to make, freezes and reheats well and can we dressed up with sundried tomatos, proscuitto, chorizo, fresh basil or home made croutons (just to name a few!) I almost always add a dollop of sour cream just before serving!
Lentil soup
3 tablespoons of butter
1 Onion chopped
2-3 Garlic cloves (or 1 if you're not a garlic fan)
1 Cup of dried red lentils
400G can of chopped tomatoes
2-3 tablespoons of sundried tomato pesto
3 cups of vegetable stock
Melt the butter over medium heat, add onion and garlic. Once the onion is translucent add lentils, chopped tomatoes, pesto and stock and bring the boil. Reduce heat and simmer for 45 mins.
This recipe will serve 4. I usually do a double batch though and freeze individual servings.
You can also do basil pesto with green lentils instead of tomato pesto and red lentils.

Today I am doing a beef roast in my slowcooker.. I can't go back to doing it in the oven since I tried it.. and then making the gravy in the liquid after the roast has cooked is so yummy, I could just drink it like that!

I went away for the weekend with friends... everyone prepared a dish for dinner and we feasted like kings. I wish I could eat like that every day. It's not just the food, it's the combination of the food and the company that makes it wonderful.
The highlight was the mulled wine. I'd never had it before and it was amazing. I think I will have to learn how to make it and substitute it for my winter cups of tea. Being perpetually mellow seems like the perfect way to get through the colder months.

I'm a vegie, but I finally made some delicious (I hope) bacon jam for my dad's birthday. My first experiment with it lead to a baked on crust in my iron cast pot... but this time around it worked perfectly :)

I cooked Peanut Butter & Chocolate biscuits!
They were good as, i had planned on taking them to work with me.. Then we got stoned and ate them.. ALL.

Sooooo much butter! Midweek we try our best to avoid carbs at night and eat lots of low calorie stuff. It's really hard though :/
Do you have any low cal and/or nob carb type hints and ticks you could share with me? A friend of mine has just fallen in love with caramelised balsamic vineagar! That's on my shopping list now :)

My housemate is away and she doesn't like mushrooms so i get to use mushies tonight!
I kind of make some of it up as I go but tonight's stir fry will include :
*sugar snap peas
*string beans
*beansprouts
*Enoki mushrooms
*button mushrooms (sliced)
*flat mushrooms (sliced)
*udon noodles
*Vegetable oil
*Olive Oil (for the chicken)
*garlic
*ginger
*sesame oil
I'm wondering what to do with the chicken...i could cook it in chili flakes i guess but i don't want to overpower the star of the meal.

Hi SS! Thanks for responding. I also like the tastes of cheese but my belly doesn't tolerate it, neither do my ethics about eco devastation because of the thousands upon thousands of cattle on many kilometres of land, polluting the earth and being part of the imbalance causing climate change. A way of westernised humanity that has gone out of control, to have animals in their masses instead of a few around to locally satisfy the needs of people in their communities. So I find it easier to be vegan in some ways. And still have soy cheese. I find the nicest one is Soy King, in the yellow roll. It has utterly no dairy, unlike the rectangular soy cheese that is typically easier to get, it still contains a dairy product in it.
I hope to recover from my physical condition that necessitated a hospital visit last night to soon bring you some pics, of course I'll have to wait anyway..
Good on you for still eating vegetarian meals!

I have just had a nice red soup..red lentils, beetroot, carrot, plus other vegies, potato, mushrooms, cabbage, a big red pepper, red capsicum, garlic, onion, leek, shallot...with herbamare and filtered water.
I hand processed it after cooking to try to make it less liquid, and then it turned out like a chunky soup. I added a splash of tamari and a few scoops of soy cream cheese, swirling it through to make it creamy! Yummy as anything, I almost managed two bowlfuls!

the way i love my drumsticks best goes as follows:
clarified butter (don't know if that's the right term for it but i basically melt the butter and scoop off the frothy part of it), some onion (chunky bits) and garlic, chicken spices (or any spices you like). brown them a bit, then add water so each drumstick is half covered with water then turn up the gas or electricity, add some honey and then keep turning the drumsticks. eventually the water will evaporate; add water until the drumsticks are ready but make sure you can end with the drumsticks being turned into the nice sauce you've created in the process.
i use this method when i want juicy and very tasty drumsticks; if you want a crispy skin version, then this won't work.

another very tasty winter dish: witlof (or chicory) rolled in ham with a cheese sauce and mash, grated cheese on top, in the oven...........mmmmm
you can either braise or boil the chicory (the whole piece); i prefer to braise them coz if done well (which means that you keep your eye on 'm all the time and turn 'm frequently so they don't burn), they caramelise and become sweeter as opposed to bitter. make a nice fluffy mash. make your best cheesesauce ever (bechamel +cheese).
roll each chicory in a nice slice of ham, put them on the bottom of an oven dish, poor over the cheesesauce (don't make the cheesesauce too runny coz it'll get even runnier in the oven), cover it all with mashed potatoes and finish it off with grated cheese.
put it in the oven until the grated cheese is golden brown.
delish!
ps: if it weren't so hot here, i'd be wanting this dish tonight!!!

Last night for dinner I made falafel from scratch, and even made the pita bread from scratch, on the fire =D mmmmmm delish, with home made labaneh, baba ganouj and tahina.
Followed by a dessert of chocolate-dipped strawberries and whipped cream.

oh, i needed self raising flour for my cookies, but i didn't have any so i went online and found i need to add baking powder. i found out i didn't have baking powder so i made some with bi carb and cream of tartar.
mum showed me the huge box of self raising flour at eye level when she got home. in my defence, it was in the tuna/soup/can section...

seriously, it isn't all that nice to do healthy eating but the body deserves decent stuff and maybe now & then some crap....
one can make healthy eating nicer than the normal boring salads but i'm sorry, to me, the best things on a plate never ever get a mention on the healthy eating list...

make a double one if you feel like it: instead of using water, use the first chicken stock you made, the result will be a stock that's a lot more nutritious and has loads more flavour. works well with poultry or beef; doesn't work for fish or game.
another way of enhancing the flavour is to brown the abatis (off cuts) of the chicken in the oven first.
i love lesbian gourmets but i'm so glad my wife isn't one...i'd have the shape of a barrel! :D

2 weeks ago big batch of chicken stock and last week big batch of vege stock.
still have some beef left.
as you say so much better. I freeze mine in muffin tray so have all these neat ice blocks of stock and just throw into cooking and instant yummo.

oh, a muffin tray is a nice idea. I freeze mine into ice cube trays so I can more accurately dose - a single cube is the perfect amount for a mug of soup. and I also put larger amounts into plastic cups for big dishes.

used to do the ice cube thing but i always used 2-4 cubes a time so just use
a muffin tray and a cupcake tray which is smaller and perfect size.
used it in my homemade gravy the other night and yummmmoooooooo
but as you say great for a quick bowl of soup.

just treated myself to a very nice little brunch: ciabatta, olive oil, gandaham, cherry tomatoes, homegrown basil and mozzarella. pepper and salt. under the grill. i know, no culinary skills needed but so yummie! and not really fit for someone who's on a healthy eating program but hey...am only cheating on myself so that's ok :)

When I'm queen of the universe, post-partum care, including meals and housework will be socialised and provided by the state. In an even idealler world, we'd have supportive communities around us that would do it anyway.

we got ourselves a vita-mix 5200 blender. it comes with something that looks like a frigging butt plug but i'm sure we'll enjoy the machine in many other ways! :D
my wife just made a nice and healthy gazpacho in less than two minutes, prep work, cleaning it afterwards and all....what a machine, i am majorly impressed!

I'm a bit of a pro at baking and desserts, but only when I have something I am procrastinating over. Hence, I call it procrastibaking (my friends and I made a FB page for it. Has several thousand fans :D )
The best thing I have ever made was as follows:
Profiteroles in spun sugar "nests" filled with strawberry cream and vanilla cream (alternating), glazed with very, very thin icing (about 1 part icing sugar to 50 billion parts water, so it was clear and very thin, but gave them a nice sheen and set hard), and then I cut the profiteroles open, so there was a little wedge missing from them, and arranged fresh strawberries in them. They looked and tasted BITCHIN'.

Cola, juice of a lime, sugar and jalapeños! It's a nightmare to work with, it sets in a minute and sticks to EVERYTHING. Totally worth it though :p

a quatre-quart is very nice to eat and very easy to make: take 4 eggs, weigh them and then use the same amount of sugar, flower and butter. yes butter. :D

wow, vegan....i could do vegetarian but vegans don't have dairy either...so no cheese? :eek:
i am in awe of ppl who chose to eat like that, i really am.

i know, its a crazy big committment. she's hardcore, no wool or honey cos it hurts the bees! the wool thing i disagree with though, im pretty sure sheep need to be shorn to stay healthy... plus it doesnt affect them really as far as i can tell.
theres a soy cheese you can get, called cheezly. haha. also all kinds of soy meat substitutes. its pretty intense. the cake is coming along nicely thanks! lol no i still have to find out how to do the sexy layers. i have only so far found recipes for the swirly rainbow kind of cake. i want the neat layered kind :P

no my canadian friend: the french invented the french fries (those tiny sorry excuses for chips, full of grease), WE invented chips. il n'y a pas de quoi.
apparently people in belgium used to cut shapes of fish out of potatoes when they couldn't get their hands on fish.
you are such an atheist! chips+mayo=marriage made in heaven; your combo's a bit too american for my liking.

i'm just kidding you! french chefs are not too bad compared to the belgian ones. :D and no, our cuisine has evolved from heavy cream-flooded dishes to light and funky stuff.

Nah, my dad is not about lentils at all - he hates them. He's a bit odd in that he has French parents (his mother taught him to cook in old school French style), but he was born and raised in Australia, so adopted a lot of their styles (principally freshest ingredients possible and simplicity is key), then moved to France and was trained as a chef there. He also went to Italy, Belgium (nyah nyah), Germany, Spain, Portugal, Sweden, Switzerland and Denmark to train.
He used to be a rôtisseur (roasts chef) for a long time, but also did poissonnier (fish), grillardin (grill), entremetier (vegetables) and friturier (fried). He always refused to be a saucier though. He believes that as a general principle, sauce is used to cover up bad cooking. Now he is a pâtissier and owns a little gourmet boulangerie.
Belgium does have very nice cuisine, however, Belgium is just an extension of France and Germany as far as both its language and food goes. All its cooking principles are that of France. The French were the first to use the technique of frying, and they were the first to fry potatoes (originally in diced blocked that had been partially cooked beforehand so they became crisp on the outside, but very moist and fluffy on the inside). All the Belgians did was cut them into strips instead of diced blocks.

If sheep aren't shorn they can die. Also, animal rights activists claim it's cruelty that they get shorn in the winter, but if they are shorn in the summer they get horrendously sunburnt and often die of heat stroke and skin cancer if they are shorn in summer. Cows will also die if they aren't milked. Bees aren't harmed by honey being removed. They are subdued with smoke, which just makes them drowsy. Bee keeping has actually preserved a lot of species of bee that would have naturally died out eh.

i speak flemish which has as much to do with french as chips with ketchup! :D

anyhoo, i love a bit of rivalry, between you and me, i love french food as much as our food, no german food for me though. you have to see my replies in the right context: there will always be friendly rivalry between france and belgium, that's all it is

do you know what the elephant in the room is here? DISHES... all of this cooking means that somebody has to the dishes. let it not be me.
i hate dishwashing with a fiery passion. once, when i was a child, a bee came out of a cup and stung me while i was dishwashing. i think that's a sign that god has decided to exempt me from dishwashing for all time.
could somebody please do my dishes? they're staring at me pleadingly from the sink, i think they're sad and want to be scrubbed and loved. but it's all too much for me.

My dad told me that if I ever got lost in outback Australia (because it's SO likely) to follow bees because they can't live more than a mile from water.

I've always found French portions very good. It's because Germany makes one gigantic disgusting meal and throws it on a plate and that's the entire thing. France makes about 10 tiny courses of deliciousness and dishes it up to perfection.
Belgium tries to copy France, but it ends up German and then they fail. :P
The French actually object to the name "French Fries" - they are an American invention. The French (rightly) maintain they invented the manner in which the potatoes are cooked, and the use of potatoes. We do concede that the Belgians got to lazy to finish cutting up the potatoes into diced cubes, and so they settled for sticks. :P
The speciality of Dad's boulangerie is desserts, but he also does gourmet breads. He is also a chocolatier and makes his own chocolates in a combination of French and Swiss style.
My mother stirs up Dad by saying "If there is definitive proof of God, it is France. Rolling green hills, beautiful beaches, amazing landscapes, produce that is to die for. If there is proof that Satan exists, it's that France is full of Frenchmen." Dad counters it by saying "Everything good has either been invented in, or improved by France and the French."

ahaha no, i was being sarcastic. i think bees are okay if you take some honey from them.
